#michiekitchen: "CLAYPOT CHICKEN RICE" DA MICROWAVE STYLE

Whip up a good #meal with half the time and hassle!

A busy working lifestyle doesn't mean you can't prepare a good meal with minimal time. What I'm gonna share today is a simple recipe - "Claypot Chicken Rice" prepared with just a press on the microwave's button.

INGREDIENTS:
(serves 2)

1 cup Rice
1 Chinese Sausage (Lap Cheong), sliced & fried
Salted fish (Fried)
3 pieces Shallots (Fried)
1 handful Dried Prawns 
2 - 3 pieces Mushrooms (soaked & sliced)
1 stalk Spring Onion (chopped)
1 - 2 pieces Chicken Drumsticks (chopped into bite size pieces)

1/2 Wax duck (Lap Ngap) - Optional
1/2 Chinese Liver Sausage (Yoon Cheong) - Optional


SEASONINGS (To marinate chicken):

1 tablespoon Oyster sauce
1 teaspoon Dark Soya Sauce 
1 teaspoon Soy Sauce
1 clove Minced Garlic
1 inch Fresh Ginger (Grated)
1 1/2 tablespoons Shiao Xing Wine (Chinese Cooking wine)
1 teaspoon Sesame Oil
1/2 teaspoon sugar
Dash of White Pepper 










TO COOK:

1. Marinate the chicken with all the seasonings. 
(You can marinate one day ahead and keep in the fridge for your dinner tomorrow)



2. Deep fry the Chinese sausages, Salted Fish, Dried prawns & Shallots separately until golden brown. 

3. Wash and drain rice. Put in a microwavable bowl and put water lesser than usual measurement (1 cm lesser).

4. Press 28 minutes and let it cook on high heat with lid open.


5. When the water starts to lessen by half, pause the microwave and take out the rice.

6. Add in the chicken and other fried ingredients on the hot rice.


7. Cover with lid and continue cooking in the microwave.


8. After 28 minutes, your rice is ready. Remove from the microwave and sprinkle with spring onion on the hot rice. Stir evenly and serve on plate.

Done with my busy schedules, I finally have the time to sit down and blog about my dining experience at YUK SOU HIN @ WEIL HOTEL (IPOH) which took place about two months ago.  I was being invited by the hotel's PR Team at the first place to drop by and review the dim sum which was spearheaded by their   Hong Kong Master Chef, Mr. Chung Ho Shi but unfortunately I'm unable to attend.
