Fancy a soft boiled egg on your hot #Ramen? 

One of the thing that we usually put on our order list while dining in a ramen shop is the Ajitsuke Tamago or usually known as Japanese Marinated Soft Boiled Egg. It's a perfectly marinated soft boiled egg with the center still runny and creamy. 

Today, we are going to make this at home. Trust me, it's really easy! 
(P/S: You don't have to pay RM 2++/piece at the shop for a piece of egg anymore =D)


INGREDIENTS:

4 Medium sized eggs (Room temperature)

A pot of water to boil (Enough to cover the eggs)
2 tablespoon vinegar 

Iced water 

A needle 

FOR THE MARINATE:
3 cloves Garlic 
3 slices Ginger 
1/2 cup Soya Sauce
1 1/2 cups water 
Sugar to taste 


HOW TO MAKE:

Before handling the eggs, add in 2 tablespoon of vinegar to the pot of water and bring to boil. 
(In this case, I use Apple Cider Vinegar. You can use any other vinegar that's available at your kitchen) 



Then, use the needle to make a small hole in the shell at the large end of the eggs before putting into the boiling water.

TIPS: Pricking the egg provides a quick route for the air to escape, which gives you an egg with a smoothly rounded end and easy peeling. 


Next, prepare a bowl of ice water for later use.



When the water is boiling, add in the eggs gently. Use a ladle to avoid breaking the eggs. Set your timer and cook for 5 minutes & 45 seconds.



In a small pot, put in all the marinate ingredients and let to simmer. Remove from the heat once boiling and leave to cool. 



Remove the eggs after 5 minutes & 45 seconds and transfer to the pot of iced water. This is to prevent the eggs to continue cooking. 



Leave for a while. Break and remove the shell. Becareful when peeling to avoid breaking the soft egg.

Pour marinate on the eggs. Cover with a cling wrap on top of the marinate surface to press the eggs down. This allow the eggs to soak evenly. Let it marinate for at least 3 hours before serving. 

Your eggs are ready! 
For a perfect cut, slice with a string of thread instead of using the knife :)

Serve on a bowl of hot instant noodles or a bowl of rice, yummZzz..

#DINEWITHME: YUK SOU HIN | WEIL HOTEL (IPOH)

Done with my busy schedules, I finally have the time to sit down and blog about my dining experience at YUK SOU HIN @ WEIL HOTEL (IPOH) which took place about two months ago.  I was being invited by the hotel's PR Team at the first place to drop by and review the dim sum which was spearheaded by their   Hong Kong Master Chef, Mr. Chung Ho Shi but unfortunately I'm unable to attend. #COOKWITHME: KOREAN CORNBREAD / OKSUSU-PPANG (옥수수빵)

Hands up if you are big fan of #Corn ! Today we are going to make Cornbread, the Korean style - Oksusu-Ppang Oksusu (옥수수)  = Corn  Ppang (빵)  = Bread What is Oksusu-Ppang (옥수수빵) actually?  It is the memory of people who went to school decades before The American government was supporting Koreans' nutrition by sending them tons and tons of cornmeal. Some got the idea to make cornbread out of it and distribute the bread through the school system. After Korean War the school provided this daily snack to the students just before last class was finished. Oksusu-Ppang has an intense corn flavor and it's fluffy like a sponge. Let's start making!  __ CONRBREAD / Oksusu-Ppang  (옥수수빵)  (serves 4 - 6) Ingredients: 2 cups / 280 grams Cornmeal 1 large Egg 1 ½ cup Milk  ½ teaspoon Salt  2 tablespoons White Sugar  1 tablespoon Vegetable Oil 2 teaspoons Baking Powder 1 tablespoon Butter (to grease baking pan) ...
