#COOKWITHME: BIBIMBAP 비빔밥 / KOREAN MIXED RICE

비빔밥 BIBIMBAP / KOREAN MIXED RICE
(with Multi-grain rice)



INGREDIENTS:

Multi-grain rice / Japgokbap (잡곡밥)
1/2 cup Short Grain Rice (Calrose rice)
1/4 cup Brown Rice  
1/4 cup Barley
2 tablespoons Black Sweet Rice
1/4 cup Red beans (soaked overnight)
½ cup Water



Toppings
1/2 Carrot (cut into matchsticks)
1/2 Cucumber (cut into matchsticks)
Toasted Seaweed 
1 Egg 

Spinach* (Refer to the recipe below) 

Bibimbap Sauce:
1 tablespoon Gochujang 
1 teaspoon Soy Sauce
1 teaspoon Sesame Seeds
1 teaspoon Sesame Oil
1 tablespoon Vinegar 
1 teaspoon Brown Sugar

HOW TO MAKE:
Multi-grain rice / Japgokbap (잡곡밥)


1. Combine all the rice and grains and wash thoroughly. Drain the excess water.
2. Add 1 ½ cups of water, cover and let it soak for 2 - 2 ½ hours.
3. Cook over medium high heat for 7 - 10 minutes or until bubbles vigorously. Stir the rice.
4. Cover and continue cooking over low heat and let simmer until rice turns fluffy and well cooked. 
5. Alternatively, you can also cook your rice in the rice cooker or microwave.




Seasoned Spinach / Sigeumchi Namul (시금치 나물)

Ingredients: 
For blanching 
Spinach (washed)
Salt 
Water 

For seasoning
Soy sauce / Salt (to taste)
1 clove Garlic (minced)
Sesame oil & Sesame seeds

How to make:
1. Cut off the roots from the spinach and wash clean. 
2. In a pot of boiling water, add in the salt and put in the spinach. Blanch for 30 seconds.
3. Drain, and wash cooked spinach on cold water and squeeze gently to remove the water. 
4. Cut and mix the blanched spinach with seasonings. 




Preparing other vegetables:

1. Stir fry carrot with a little bit of sesame oil. Season with soy sauce and sprinkle with sesame seeds.
2. Stir fry cucumber with a little bit of sesame oil. Season with soy sauce and sprinkle with sesame seeds.
3. Fry the egg. 

Preparing Bibimbap sauce:
1. Mix all the sauce ingredients well in a small bowl. Stir until the sugar is dissolve. Set aside.


Gochujang / Korean Hot Pepper Paste
(You can get this from AEON Supermarket)


Making Bibimbap:
1. Layer the bowl with cooked multi-grain rice.



2. Place the cooked vegetables on the rice, top with fried egg, Bibimbap sauce and a sprinkle of toasted sesame seeds.



3. Your bibimbap is now ready. Enjoy!  


NOTE:
The classic Bibimbap comes with stir-fry or minced beef, but I opt for the non-meat version this round. 


You may also replace / mix & match the vegetables as below:-

  • Zucchini 
  • Shiitake Mushrooms 
  • Bean Sprouts

#DINEWITHME: YUK SOU HIN | WEIL HOTEL (IPOH)

Done with my busy schedules, I finally have the time to sit down and blog about my dining experience at YUK SOU HIN @ WEIL HOTEL (IPOH) which took place about two months ago.  I was being invited by the hotel's PR Team at the first place to drop by and review the dim sum which was spearheaded by their   Hong Kong Master Chef, Mr. Chung Ho Shi but unfortunately I'm unable to attend. Later after that, I visited the restaurant with my mum when I dropped by in Ipoh the other day.  It was a busy morning. #COOKWITHME: KOREAN CORNBREAD / OKSUSU-PPANG (옥수수빵)

Hands up if you are big fan of #Corn ! Today we are going to make Cornbread, the Korean style - Oksusu-Ppang Oksusu (옥수수)  = Corn  Ppang (빵)  = Bread What is Oksusu-Ppang (옥수수빵) actually?  It is the memory of people who went to school decades before The American government was supporting Koreans' nutrition by sending them tons and tons of cornmeal. Some got the idea to make cornbread out of it and distribute the bread through the school system. After Korean War the school provided this daily snack to the students just before last class was finished. Oksusu-Ppang has an intense corn flavor and it's fluffy like a sponge.
