THAI TEA ICE CREAM / ไอติมชาเย็น
Ingredients:
(Makes a quart)
1 ½ cup Whipping Cream
3 bags Thai Tea / ¼ cup Thai Tea leaves
A pinch of Salt
100 ml Sweetened Condensed Milk (reduce the amount if you prefer less sweet)
Optional:
1 ½ tablespoon Baileys's or any other Irish Cream liqueur
Additional Toppings:
3 tablespoons Sweetened Condensed Milk
3 tablespoon Evaporate Milk
Mix well and refrigerate for later use.
HOW TO MAKE:
1. In a small pot, heat the whipping cream over medium heat, stirring occasionally.
2. Add tea bags / leaves when the cream is steaming and stir just until the cream boils.
3. Remove from heat and steep for 5 minutes. Add in a pinch of salt.
4. Using the fine mesh strainer, strain the cream as press out as much liquid as you can.
(Note: Don't leave the cream sit until it cools down or it will be really hard to strain)
5. Refrigerate for at least 4 hours or completely cold when the cream is cool enough to go into the fridge. (Make sure the cream is cold before whipping).
6. Whip the cream to soft-peak using a stand mixer once the cream is chilled completely.
7. Add condensed milk and Bailey's (optional) and continue whipping until stiff peaks.
8. Transfer the ice cream into a container and freeze for 2- 3 hours or until solid.
9. Scoop and serve!
Trust me. It tastes so good like gelato!
