#michiekitchen: STEAMED YAM CAKE

STEAMED YAM CAKE 
(Non-Halal)

Ingredients

1 medium sized Thai Yam
1 bowl Dried prawns (soak over night)
2 Chinese Sausages (Lap Cheong)
5 Large Dried Chinese / Shitake Mushrooms

250g Rice Flour 
300ml Filtered Water 
300ml Boiled water 

3 cloves Garlic (minced) 
1 bowl of leftover soaked mushroom water 
1 bowl of leftover soaked dried prawns water

Cooking Oil 


Garnishing

1 stalk Spring Onion (diced)
6 - 8 Shallots (Fried)

(Optional)
Chili (diced) 
Coriander leaves (diced)
Sesame seeds (toasted)

Seasonings

1 1/2 tablespoon Five Spice Powder 
1/2 tablespoon Salt 
1 tablespoon Sugar 
Sesame Oil (To taste)
White pepper (To taste)

TIPS #1
Choose the rounded sized yam with minimal holes on the surface. Weight the yam on your palm. If it feels heavy, that's a good piece of yam :)


Preparation

1. Soak dried prawns overnight or until soft. Drained and chopped roughly. Set a side.
2. Diced the soaked Mushroom and Chinese sausages.
3. Diced all garnishing ingredients for later use.




4. Prepare the yam by peeling off the skin. Wash and cut yam into small cubes. (Remember to wear gloves to prevent itchiness when handling the yam)


5. Start by frying the shallots until golden brown. Drain the excess oil on a piece of kitchen paper towel. 


6. Add some oil into the pan and put in the minced garlic. When it starts to brown, add in the chopped dried prawns and stir until it's golden. Lift up.


7. Toss in the diced mushrooms and cook until slightly golden. Leave a side.

8. Clean the frying pan, and then put in the diced Chinese sausages (Lap cheong). 
(No oil is needed for this process and the sausages will release oil when cook). 
Stir until it turns golden. 

9. Then add in the dried prawns and mushrooms into the sausages and stir to mix the ingredients. Set a side when done.


10. In a clean pan, heat some oil and add in the minced garlic. Stir in the yam.


11. Put in the Five Spice powder and grounded white pepper to season. When it's slightly golden, add in the leftover soaked mushroom & dried prawns water. Cover the lid and let it simmer. Yam is ready when it's half cook / soften.


It should look like this when it's done :)

12. In a large pot, add in all the seasonings and stir with 300ml filtered water & 300ml boiled water. Mix until all the lumps are diluted. 



13. Add in the cooked yam and stir. Then add the dried prawns, mushrooms and fried shallots (leave a bit for garnishing). Mix well. 

14. Heat the steamer. 



15. Get ready a container and pour in the mixture.

16. Let the mixture to steam for about 45 minutes to 1 hour. 

17. Poke a skewer in the middle of the yam cake to check if it's ready. If the skewer comes out clean, it's READY!

18. Remove from the steamer and set a side to cool. 


19. Garnish the yam cake. 


20. Cut into desired serving size.

Hands up if you are big fan of #Corn ! Today we are going to make Cornbread, the Korean style - Oksusu-Ppang Oksusu (옥수수)  = Corn  Ppang (빵)  = Bread What is Oksusu-Ppang (옥수수빵) actually?  It is the memory of people who went to school decades before The American government was supporting Koreans' nutrition by sending them tons and tons of cornmeal.
